- If you can find fresh Blue Lake green beans, they're thge best:

- 2 cloves garlic
- boiling water
- 1/4 c wine vinegar
- 1 tsp olive oil (or less if you want)
- salt and pepper to taste
- 1 lb fresh green beans (preferably Blue Lake variety)

- Leaving garlic cloves in their skins, pour at least a cup of hot water
- over the garlic cloves, cover and let sit for 5 minutes. This will
- alter the flavor of the garlic substantially and is an important step.
- Then remove the skin and mince or crush. Combine with balance of
- ingredients in a large bowl and let sit.

- Clean green beans, leave whole and ightly steam for about 10 minutes or
- less. Beans should still be slightly firm and not mushy. Drain green
- beans and while still hot combine in large mixing bowl with above
- dressing. Toss well and serve warm.

- Alternative: These are also delicious cold for picnics and will keep
- in the refrigerator for 4-5 days.
